Eureka is a small, spreading tree with few thorns, bearing fruit that has a clean, bitter taste, plus a high juice and acid content. Its appeal lies in its superior tangy juice, while the pulp and rind are just as sought-after for cooking, baking, and cleaning around the house. The juice and zest can be used to flavour both sweet and savoury dishes, or added to hot or cold drinks.
